So I wanted to recreate my favorite Chipotle order at home and I found the perfect recipe to do it with!
At Chipotle, I always order the salad bowl with chicken, black beans, pico de gallo, corn, guacamole, and cheese.
I decided to use this recipe from Half Baked Harvest to make the chicken, and ya’ll, it turned out so deliciously yummy!
Ingredients I used:
2 lbs boneless chicken breast tenders
1 poblano pepper
2 green bell peppers
1 white onion
Spices: Smoked paprika, cumin, cilantro, chili powder, garlic powder, salt and pepper
When done add in:
1 can of black beans
1 can corn
Serve with 1 bag of corn tortillas, lime, green onion, fresh-cut cilantro
Set the oven to 425 for 30 minutes and done!
I loved that the preparation was simple and the sheet pan option is always a winner for me… every single time.
